Flexibility in homeschool does not always refer to your schedule.  There is flexibility in what you teach, and how you teach it.  Just because the directions say, "Add 1 cup of sugar", does that mean we have to?  What if I use a 1/2 cup of sugar instead?  Does that mean the recipe won't come out right?  Or does that mean I made it especially for me?  Thoughts to think about.  TM : )
